I only roast the eggplant and peppers in the oven; it's tastier if the other vegetables are fresh, i.e., raw. But if you like roasting vegetables, you can roast all of them that way. If you have roasted eggplant and peppers stored in the freezer beforehand, you can make this meze quickly. It's one of the famous mezes of the Mediterranean region where I live, and I'm happy to share it with you here. In slightly more eastern regions, the way these vegetables are crushed is actually done with traditional kitchen stones. It was a natural dish that was frequently consumed by people in the past, and now I'm describing it here as a meze.
