Gluten Free Fit Cookies

Can salty cookies be gluten-free and healthy? Yes, they can. They're crispy and very similar to regular cookies. They're also very high in protein and healthy. Mine lasted exactly 4 days when stored in an airtight container. They went so well with tea that I ate them every day after breakfast. I'm not a fan of consuming my healthy recipes as breakfast, and I don't recommend it. Because they're not a meal on their own. They're more for snacks between meals. Natural, simple, additive-free desserts can be consumed at any time of day to satisfy sweet cravings.

Why I Recommend Making Gluten-Free Savory Fit Cookies?

My cookies are both healthy and very suitable for a gluten-free diet. The chickpeas they contain are a high source of fiber and plant-based protein. This makes them a beneficial legume that keeps you feeling full for a long time, balances blood sugar, and regulates digestion. They'll be a great recipe for commuting, tea time, or whenever you crave a salty snack, especially if you're on a diet. Besides chickpeas, they also contain eggs, which makes them very high in protein. I'd like to mention the benefits of the eggs, sesame seeds, and chickpeas in my recipe.

Chickpeas: A high source of fiber and plant-based protein. They help balance blood sugar and support weight management by providing a feeling of fullness for a long time.

Eggs: A "complete protein" source containing all essential amino acids. They support muscle development and repair, and strengthen brain function with their choline content.

Sesame seeds: A rich source of calcium, magnesium, and healthy fats. They help lower cholesterol and protect the immune system with their strong antioxidant properties.

Ingredients for Gluten-Free Savory Cookies

1 cup Chickpea Paste
½ cup Ground Oats
1 Egg (white inside, yolk for brushing on top)
1 teaspoon Baking Powder
Sesame Seeds

If you don't have chickpea paste, you can use chickpea flour or corn flour instead. If the consistency is too thick, you can adjust it with milk or water.

How to Make Gluten-Free Savory Cookies

1. Prepare all ingredients in separate bowls. First, pour the chickpea paste into a bowl. Add the egg white and salt and mix. After mixing, add the oats. If the consistency is too soft, you can add a little more oat flour. However, this mixture cools down after baking and resting. If you have a food processor, you can blend all the ingredients together.

2. Once the sauce for the cookie dough is ready, you can shape them as you like. You can brush the egg yolk on top of the shaped cookies. If you have any other preferred sesame seeds or other alternatives, you can use chia seeds or pumpkin seeds on top of the cookies.

3. Place the cookies on a baking sheet and bake at 180 degrees Celsius for 25 minutes. The cookies become hard after baking and cooling. Once cooled, you can store them in an airtight container.

While traditional savory cookies sold in bakeries contain white flour, margarine, high levels of salt, and solid fats, this recipe is completely clean. The plant-based protein and fiber from chickpea paste, combined with the digestion-friendly properties of ground oats, help balance blood sugar and provide long-lasting satiety. It's a great alternative for those with gluten sensitivity, those on a diet, or those looking for a healthy savory snack to have with their tea.
