Banana & Oatmeal Fit Pancakes
In my opinion, pancakes are the most indispensable part of breakfast. Kids love them too; they sometimes eat them for breakfast, and sometimes as a snack with something else spread on them. As adults, we enjoy spreading honey or tahini and molasses on pancakes instead of bread after breakfast. My pancake recipe is both healthy and diet-friendly, why? Because it contains no flour or sugar. Preparing the sauce with a food processor or blender takes only 5 minutes. Cooking it in a pan only takes 10 minutes.
Why I Recommend Oatmeal Pancakes, What Are Their Ingredients and Taste?
When you don't add banana or other natural sweeteners, they taste like regular bread. They go well with sweet spreads, but they're great with cheese or breakfast foods. However, if you add banana, especially if it's ripe, it will be very sweet and will transfer that natural sugar to the pancakes. This results in naturally sweetened oatmeal pancakes. Why is oatmeal healthier than flour? Because oatmeal isn't refined like white flour, it retains its B vitamins and minerals like iron, magnesium, and zinc. Let's discuss the differences between the two.
Key Differences:
Gluten Content: Oats are naturally gluten-free (except for the risk of cross-contamination); flour (wheat) contains a high amount of gluten.
Blood Sugar (Glycemic Index): Oats are a complex carbohydrate, digested slowly, and keep you feeling full for longer. White flour causes blood sugar to rise and fall rapidly.
Fiber Content: Oats contain significantly higher fiber and protein than flour (especially white flour).
Oatmeal Pancake Preparation Time
Preparing the pancake batter using a food processor: 2 minutes
If you are mixing the batter by hand: 5 minutes
Cooking the pancakes in a pan: approximately 6-7 minutes
Ingredients for Oatmeal Pancakes:
1 cup Oatmeal
2 Bananas (size doesn't matter)
2 Eggs
Half a packet of baking powder
You don't have to use bananas if you don't want a sweet pancake.
How to Make Healthy Oatmeal Pancakes
1. First, mash 2 bananas into a puree. Add the eggs and mix well. If you have a food processor or blender, you can process the eggs and bananas in the food processor or blender.
2. After thoroughly mixing the banana and egg, add the oats and baking powder. Mix with a spoon or whisk. If the consistency seems too thick, you can add a little milk.
3. Preheat the pan slightly. Pour in enough sauce to make the pancakes the desired size and cook them. The pancakes will be ready once they are cooked on both sides.
4. Don't leave the pancakes open on the plate for too long because they dry out. You can store them in an airtight container. Enjoy!
